Winemaker Wine Dinner: November 16

Winemaker Francois Servin will be here for a Wine Dinner on Saturday, November 16th at 6:00pm in The Other Half. This four course wine dinner will be highlighting five wines from Chablis; one AOC Chablis, two Premier Cru, and two Grand Cru. This will be an excellent chance to dive deeply into what makes Chablis so great!
With the family’s roots dating back to 1652 in Chablis, Francois Servin thinks of himself as an artist that using uses Old World traditions with a few benefits of modern winemaking.
“Francois makes wine because he loves to make wine. Francois feels that the winemaker is more important than the barrel maker. He says that making wine is an art, whereas so many people reduce it to a science.”

Domaine Servin Chablis 2022 – 32.99

“Roaring acidity pulls in this medium-bodied wine to give it a dense, compact feel with a distinctively cool and savory edge. Yellow currants, guava and quinine slide across the palate. Don’t rush to open this as it will deliver even more in time. This is the largest Servin Premier Cru at an impressive 2.74 hectares.” 94pts Tim Atkins
Domaine Servin Chablis Grand Cru ‘Blanchot’ 2021 – 97.99
“Note: from a .91 ha parcel; 100% stainless This is aromatically similar to the Montée de Tonnerre though even more restrained. The succulent and admirably well-concentrated middleweight plus flavors coat the palate with sappy dry extract while the balanced, clean and dry finish is unusually powerful. Domaine Servin Chablis Grand Cru ‘Les Clos’ 2022 – 108.99
“This is a “true” les Clos as the parcels stretch all the way up the hillside. The nose is profusely aromatic with roasted apricots, sweet persimmons and warm crepes. The attack is broad, and there is notable mid-palate intensity before a sweep of gutsy acidity cleans up the palate and directs all the flavors into a lingering finish.” 95pts Tim Atkins
